While the butter content found in many other foreign varieties is between 35 to 45% our cocoa contains more than 50% butter.
Kithul

Kithul Tree (Caryota urenus ) juggery tree
Kitul, Caryota Urens, is a palm tree with large and beautiful flowers growing in Sri Lanka. The sap from the flower is harvested daily by cutting off a piece of the flower stalk. Tapping the flower is an art and technique that has been handed down from generation to generation throughout the centuries.
this sap is filtered, then heated and boiled at a temperature of approximately 110° until a beautiful brown color is obtained.
Main use is as a natural sweetener. as treacle and jaggery. Variety of products are made with sap such as toddy (alcohol ) and vinegar.
Kithul sap Contains – polyphenols which are antioxidants, organic acids which are bioactive, amino acids that have many functions, beta carotenes that cause to produce vitamin A and ascorbic acid or Vitamin C that improves immunity. Thus, it’s known to yield as many health benefits as kithul jaggery. It prevents arthritis, improves complexion, alleviates constipation, aids weight loss and combats blood sugar.
For nearly the same reasons as the kithul jaggery, kithul treacle or syrup is witnessing massive demand locally as well as internationally.

GI values were found to be 27.84 for treacle and 31.34 for jaggery. Our results indicate low GI values and, therefore kithul treacle and jaggery can be recommended for diets of diabetic patients as a superior substitute for white sugar.
