Grades of Ceylon Cinnamon
Mainly Ceylon Cinnamon is categorized into 4 major grades, They are Alba, Continental, Mexican, and Hamburg. This is based on the diameter of the cinnamon sticks (quills), Most expensive grade is Alba.
Ceylon pepper
Ceylon Pepper is particularly favoured world wide as it is quite rich in piperine, the alkaloid which lends it a distinct pungency. As a result, Ceylon Pepper from Sri Lanka fetches a premium price in the international spice market. Black pepper is widely used as a’ hot’ cooking spice and seasoning. The taste of Sri Lankan black pepper is richly aromatic, with floral and citrus notes, while retaining a strong pungency. Extracts of black pepper- Piperine, oleoresin and essential oil-are also extracted from the whole drupes and have applications as both spice and flavoring agents in the food industry, and major industrial applications in the perfumery and the pharmaceutical industry.
Depending on the time of harvest and the post-harvest process, there can be different types of pepper: green pepper, black pepper, red pepper and white pepper. For black pepper, the Piper nigrum berries are harvested when green and slightly immature, then it’s blanched and sun-dried. This makes it very rich in essential oil. The black color results from the oxidation.
That occurs during drying.
Ceylon Garcinia
Garcinia quaesita, known as Goraka (Sinhala) is belongs to family Clusiaceae. It is a medium evergreen, shade-loving, relatively slow growing tree naturally found in the local tropical rainforests of Sri Lanka. The tree is small to medium sized with horizontal or drooping branches. In Sri Lanka goraka has been used for culinary and medicinal purposes. Now goraka is becoming a popular spice in the world because of its potential as a dietary
supplement for weight losses and appetite control. Goraka is not cultivated as a fruit tree but seen growing in wet and intermediate zone home gardens as a cash crop.

Goraka has been used in Sri Lanka since ancient times for culinary and medicinal purposes. The young Goraka fruits are green in color, and it will gradually turn yellow when ripe. Once fully ripe, fruits are collected, cut in half, deseeded and sun-dried for a day. The sun-dried fruit halves are smoked till black and are rubbed with a mixture of salt and oil before transferring to earthenware pots and tightly sealed. These will stay fresh for years.
Goraka has become the latest novelty to hit the health industry and has become in demand all over the world. Recent clinical studies have shown the effectiveness of Goraka in tackling weight loss and boosting the immune system.

Ceylon Cloves
Prized for their distinct flavor and aroma, and also for their medicinal qualities, cloves are the immature buds of the evergreen tree Syzygium aromaticum, also known as Eugenia caryophyllus of the Myrtaceae family. A fully grown clove tree is about 15-20 meters tall and has smooth grey bark. Ceylon Clove is notably richer in oil than the clove varieties produced elsewhere in the world.

Clove is largely used as dried whole buds. Ground clove is a major ingredient in curry mixtures, and clove oil is used for flavouring food, in the pharmaceutical industry, and in the perfume industry.
Cloves are used either whole or ground to add flavour for both sweet and savoury foods in pickling and the production of sauces and ketchup. It is also used in the cigarette industry as a flavouring agent.

Ceylon Cardamon
Cardamom pods are spindle-shaped and have a triangular cross-section. The pods contain many seeds, which are small and black, while the pods differ in color and size by species. Cardamom is generally available in the form of whole fruit as a primary product, in-ground form as secondary processed products, and also in the form of extractions of oil and oleoresin as value-added products. Cardamom lands are generally termed spice forests. Ceylon Nutmeg
Just like with Ceylon Tea, and other varieties of spices; Nutmeg, grown in Sri Lanka has developed an intricate chemical composition and a flavor complex based on the unique terroir of the country and is identified under the geographical indication of Ceylon Nutmeg. Nutmeg is mainly used for culinary purposes to flavor curries and other food products, confectionaries, and bakery products. It is also used in the preparation of beverages and drinks. Nutmeg is used as an ingredient in Ayurvedic and Chinese medicine.
Mace is a spice made from the reddish seed covering (aril) of the nutmeg seed. Its flavor is similar to nutmeg but more delicate; it is used to flavor baked goods, meat, fish, and vegetables, and in preserving and pickling.In the processing of mace, the crimson-colored aril is removed from the nutmeg seed that it envelops and is flattened out and dried for 10 to 14 days.
